Santorini has a crowd problem and a solution. The solution is to base yourself in Pyrgos or Megalochori, see Oia only at 7am, and spend the rest of the trip in the inland villages most cruise passengers never reach.
Stay In Pyrgos
Pyrgos is the highest village on the island, the old capital, and quieter than anywhere on the caldera. Hotels like Pyrgos Restaurant & Suites are calmer and cost half what the Oia equivalents charge. The sunset from Kasteli on Pyrgos's hill is, controversially, better than Oia's - and almost empty.
Dinner at Selene was already a classic. Franco's Bar for a quiet cocktail. Pyrgos has the few restaurants you'll want to return to.
Megalochori For The Slow Afternoon
Megalochori is 15 minutes downhill. White lanes, no traffic, a few wineries within walking distance. Visit Gavalas or Gaia Wines for a tasting on the caldera side. The Megalochori square cafes in the evening are full of locals - the rarest thing on this island.
If the trip is more than 4 days, rent a small boat for a half-day around the caldera. The view from the water is the postcard photo that doesn't get oversold.
Oia, But Correctly
Go to Oia at 6:30am, walk to the windmill end, watch the village wake up. You will be alone except for one bakery. Buy a koulouri, walk back. Do not return at sunset. Your photos from the morning will be better and you'll have your evening free.
